Fiesta Shrimp Skewers

- 1 recipe Cool cilantro dip shopping list
- 1 lb. large shrimp in shells(about 32) fresh or frozen shopping list
- 1/2 c amber ale or other ale shopping list
- 1/2 tsp finely shredded lime peel shopping list
- 1/4 c lime juice shopping list
- 2 Tbs snipped fresh cilantro shopping list
- 1 small fresh jalapeno chile pepper,seeded and finely chopped shopping list
- 1/4 tsp ground cumin shopping list
- 1/8 tsp cayenne pepper shopping list
- 1 clove garlic,minced shopping list
- 2 fresh poblano chile peppers,seeded and cut in 1" pieces shopping list
- 2 limes cut in wedges shopping list
- Dip: shopping list
- 8 oz. sour cream shopping list
- 2 Tbs snipped fresh cilantro shopping list
- 1 Tbs bottled salsa shopping list
- 1/2 tsp finely shredded lime peel shopping list
- 1 garlic clove,minced shopping list
How to make it
- Prepare Cool Cil Dip. Cover and chill till ready to serve. Thaw shrim,if fozen. Peel and devein shrimp. Rinse,pat dry with paper towels. Place in resealable plastic bag.
- For marinade,in small bowl stir together ale,lime peel,lime juice,cilantro,jalapeno,cumin,cayenne pepper,and garlic. Pour marinade over shrimp. Seal bag;turn to coat shrimp. Marinate in frig. for at least 30 mins or up to 1 hour,turn bag occasionally.
- Drain shrimp,reserving marinade. Alternately thread shrimp and poblano pieces onto 10-12 6" skewers leaving 1/4" space between pieces. Brush with reserved marinade;discard andy remaining marinade.
- Preheat grill. Reduce heat to medium. Place skewers on grill rack over heat.Cover and grill 8-10 minsor till shrimp are opaque,turning once halfway through. For charcoal grill,place skewers directly over medium coals,grill as above for the gas grill.
- Cool Cilantro dip: In small bowl,stir together sour cream,cilantro,salsa,lime peel and garlic.

mmmm.....this is worth stopping at the store after work! Love cilantro. Hubby and cayce will love this. Great recipe as usual Pat! 5 from me for sure.
