Mediterranean Chicken Breasts with Avocado Tapenade

- 4 boneless,skinless chicken breast halves shopping list
- 1 Tbs grated lemon peel shopping list
- 2 Tbs olive oil shopping list
- 1 clove garlic,finely chopped shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp ground black pepper shopping list
- Tapenade: shopping list
- 2 roasted garlic cloves,mashed shopping list
- 1/2 tsp sea salt shopping list
- 1/4 tsp ground black pepper shopping list
- 1 med. tomato,seeded and finely chopped shopping list
- 1/4 c small green olives stuffed with pimientos,thinly sliced shopping list
- 3 Tbs capers,rinsed shopping list
- 2 Tbs basil leaves,finely sliced shopping list
- 1 ripe hass avocado,halved,pitted,peeled and finely chopped shopping list
- 2 Tbs fresh lemon juice shopping list
- 1 tsp olive oil shopping list
How to make it
- In resealable plastic bag,combine chiclen and marinade of lemon peel,lemon juice,olive oil,garlic,salt and pepper. Seal bag and refrigerate 30 mins
- Tapanade:In bowl,whisk together remaining lemon juice,roasted garlic,remaining olive oil,sea salt and pepper. Mix in tomato,green olives,capers,basil and avocado.;set aside.
- Remove chicken from bag and discard marinade. Grill over med-hot coals for 4-5 mins per side or to desired doneness. Serve with tapenade.
