  • Instructions
  • Heat oil in a large, deep skillet. Add garlic and sauté 1 minute.
  • Add tomatoes, jalapeño, paprika and cumin. Cook, partially covered, 15 minutes.
  • Add tomato paste, salt and pepper; cook 5 more minutes.
  • Break eggs into tomato sauce.
  • Cook, partially covered, until egg whites are set, 5 to 7 minutes, or desired degree of doneness.

    Sounds good. For the fire roasted tomatoes if you have a gas range you can stick a tomato on a fork and hold it over the burner to blacken the skin, then stick it in a paper bag before peeling the skin off. It might not be quite the same, but might save you some driving around. You can do the same thing with a hot oven, but it's less satisfactory.
