How to make it

  • preheat oven to 375 degrees.
  • In a small bowl place place the garlic, rosemary, thyme, parsley, oregano, sage, coriander, and the 2 tsp of salt. Mix the ingredients together.
  • Rub the herb mixture into the chickens, inside and out.
  • Place the chickens in a roasting pan and bake them for 50 minutes, or until they are done. Remove the chickens from the pan, cut them in half, and set them inside.
  • Pour the excess fat out of the roasting pan.
  • Place the roasting pan on the stove and heat it on high until it is hot. Add the white wine and deglaze the pan.
  • Add all the peppers, and saute them for 1 to 2 minutes, or until they are cooked al dente. Add the salt and black pepper, and stir them in.
  • On each of the 6 individual serving plates, place a roasted chicken half. Spoon on the peppers and any sauce that is in the roasting pan.
