Seven Aroma Roasted Chicken with Spicy Peppers

- 1 tbs fresh garlic, finely chopped shopping list
- 1 tbs fresh rosemary, chopped shopping list
- 1 tbs fresh thyme, chopped shopping list
- 1 tbs parsley, chopped shopping list
- 1 tbs fresh oregano, chopped shopping list
- 1 tbs fresh sage, chopped shopping list
- 1 tsp ground coriander shopping list
- 2 tsp salt shopping list
- 1 tsp black pepper shopping list
- 3 whole chickens, washed and dried shopping list
- 1/2 cup white wine shopping list
- 1 red pepper, seeded, and julienned shopping list
- 1 green pepper, seeded, and julienned shopping list
- 1 yellow pepper, seeded, and juilienned shopping list
- 2 Anaheim chile peppers, seeded, julienned shopping list
- 2 poblano chile peppers, seeded, julienned shopping list
- salt to taste shopping list
- black pepper to taste shopping list
How to make it
- preheat oven to 375 degrees.
- In a small bowl place place the garlic, rosemary, thyme, parsley, oregano, sage, coriander, and the 2 tsp of salt. Mix the ingredients together.
- Rub the herb mixture into the chickens, inside and out.
- Place the chickens in a roasting pan and bake them for 50 minutes, or until they are done. Remove the chickens from the pan, cut them in half, and set them inside.
- Pour the excess fat out of the roasting pan.
- Place the roasting pan on the stove and heat it on high until it is hot. Add the white wine and deglaze the pan.
- Add all the peppers, and saute them for 1 to 2 minutes, or until they are cooked al dente. Add the salt and black pepper, and stir them in.
- On each of the 6 individual serving plates, place a roasted chicken half. Spoon on the peppers and any sauce that is in the roasting pan.
