Amaranth Crepes in Lemon Sauce

- 3 eggs shopping list
- 1 teaspoon honey or maple syrup shopping list
- 1 teaspoon vanilla shopping list
- 2 tablespoons butter melted shopping list
- 3/4 cup milk shopping list
- 1/3 cup amaranth flour shopping list
- 1/8 teaspoon sea salt shopping list
- Sauce: shopping list
- 1 cup water shopping list
- 1/4 cup honey shopping list
- 1/4 cup lemon juice shopping list
- 2 tablespoons arrowroot powder or cornstarch shopping list
- 1 teaspoon finely grated lemon peel shopping list
- 2 bananas thinly sliced shopping list
How to make it
- Beat eggs in blender then add other liquids, flour and salt.
- Heat small skillet and oil lightly.
- Put 1-1/2 tablespoons butter in pan and tip to spread over surface.
- Add 1/2 cup batter and cook 3 minutes then turn crepe and bake other side.
- Fill cooked crepe with bananas then roll up and cover with sauce.
- To make sauce combine water, honey, juice and arrowroot or cornstarch.
- Stir and simmer over medium heat until clear and slightly thickened.
- Remove from heat and stir in peel.
