Spicy Black Bean Chili

- 3 pounds black beans, dry shopping list
- 2 quarts water shopping list
- 1 1/2 cups onions, chopped shopping list
- 1/2 cup green pepper, chopped plus 1/4 cup green pepper, chopped shopping list
- 2 tablespoons chipotle chili powder shopping list
- 1 tablespoon salt shopping list
- 1 tablespoon black pepper shopping list
- 4 cups chili sauce (Heinz) shopping list
- 1/4 cup red pepper, chopped shopping list
- 1 cup tomatoes, diced shopping list
- 3 tablespoons chili powder shopping list
- 4 tablespoons cumin shopping list
- 2 teaspoons lime juice shopping list
- 1 bunch cilantro, chopped shopping list
- 4 cups vegetable stock or use beef stock if adding meat shopping list
- 2 pounds browned ground beef (optional) shopping list
How to make it
- Boil the black beans in water with onions, 1/2 cup green peppers, salt and pepper.
- Add additional water if needed
- Cook beans until slightly tender, about 1 hour.
- Add the 1/4 cup green pepper and remaining ingredients, and ground beef (if using).
- Simmer for about an hour. Add water or stock as necessary for consistency.
