Super - Banana Muffins with Graham Cracker Streusel

- 1/4 cup unrefined coconut oil shopping list
- 1 cup sugar shopping list
- 1/2 cup light sour cream shopping list
- 1 egg shopping list
- 1 tbsp vanilla shopping list
- 5 large, over-ripe bananas, mashed shopping list
- 2 1/4 cups whole wheat flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp sea salt shopping list
- 1 tbsp ground cinnamon shopping list

- 2 tbsp melted butter shopping list
- 1/4 cup graham cracker crumbs shopping list
- 1/2 cup brown sugar shopping list
- 1/4 cup oats shopping list
How to make it
- Preheat oven to 350 F and line a 12 cup muffin tin.
- In a large bowl, beat the coconut oil, sugar, sour cream, egg and vanilla until smooth.
- Add bananas and beat well
- In a seperate bowl, whisk dry ingredients.
- Stir into the creamed mixture just until moistened.
- Spoon into the muffin tins.
- Mix the streusel topping together and sprinkle generously over the batter.
- Bake for 25 minutes.
