How to make it

  • Preheat oven to 350 F and line a 12 cup muffin tin.
  • In a large bowl, beat the coconut oil, sugar, sour cream, egg and vanilla until smooth.
  • Add bananas and beat well
  • In a seperate bowl, whisk dry ingredients.
  • Stir into the creamed mixture just until moistened.
  • Spoon into the muffin tins.
  • Mix the streusel topping together and sprinkle generously over the batter.
  • Bake for 25 minutes.
