Pork Potjie

- 1 pork pieces (ensure that you use thick solid chunks) shopping list
- 2 large onions, chopped shopping list
- 2 large green peppers, chopped shopping list
- 5 large carrots, sliced in rings shopping list
- 2 heads of cauliflower shopping list
- 1kg baby butternut, cut into 2cm cubes shopping list
- 1 punnet mushrooms, halved shopping list
- 500g patty pans, halved shopping list
- 6 squash, quartered shopping list
- 10ml mashed garlic shopping list
- 10ml olive oil shopping list
- 250g salted butter shopping list
- salt and pepper to taste shopping list
How to make it
- Prepare all veggies:
- trim caulifower and cut into large chunks
- peel and cube butternut
- cut and deseed squash
- halve patty pans
- halve mushrooms
- Put your pot on the coals and add oil when heated through
- add onions and peppers, cover and cook until almost soft
- add pork pieces and season, cook covered for 1 hour, occasionally adding water
- add veg in layers; patty pans, butternut, mushrooms, squash then mushrooms
- add garlic and cook covered for 1 hour
- once veggies are soft stir pot by trying to get most of the meat on top of the veg, ensuring that you dont mash the veggies too much
- remove from the coals and serve after 10 minutes
- Serve on a bed of Jasmine rice
