How to make it

  • Prepare all veggies:
  • trim caulifower and cut into large chunks
  • peel and cube butternut
  • cut and deseed squash
  • halve patty pans
  • halve mushrooms
  • Put your pot on the coals and add oil when heated through
  • add onions and peppers, cover and cook until almost soft
  • add pork pieces and season, cook covered for 1 hour, occasionally adding water
  • add veg in layers; patty pans, butternut, mushrooms, squash then mushrooms
  • add garlic and cook covered for 1 hour
  • once veggies are soft stir pot by trying to get most of the meat on top of the veg, ensuring that you dont mash the veggies too much
  • remove from the coals and serve after 10 minutes
  • Serve on a bed of Jasmine rice
