Alligator Soup Recipe
This is perfect recipe for football fans!!!

Ingredients
  • 1 lb. of Alligator meat, boneless
  • 3 sticks of butter or margarine
  • 1 c. of chopped celery
  • 2 c. of chopped onion
  • 1 c. of flour
  • 3 c.of crushed tomatoes
  • 1 tsp of garlic
  • 9 c. of seafood/chicken stock
  • Creole Seasoning (season to taste)

Directions
  1. First you wan to trim all fat from alligator tail meat and cut into chunks.
  2. Pound the meat to tenderize pieces are 1 inch thikc.
  3. Then you want to cut into smaller pieces about 1 inch square.
  4. Season this with Zatarain's Creole Seasoning, mix thoroughly.
  5. Now you can take a large cooking pot place half of the butter.
  6. Melt over high heat and cook seasoned meat approx 10-15 min.
  7. You can stir occasionally to prevent sticking.
  8. Now remove browned meat and any browned drippings and set aside.
  9. Then you can add remaining butter, celery and onions and cook for approx. 5 minutes.
  10. You wan to make a roux by sprinkling in flour and stir to blend, and then cooking to light brown color.
  11. Then add tomatoes and garlic,cook approx 5 min.
  12. Then add about 3 c. of stock and stir to make sure roux and sediment is dissolved.
  13. You will need to cook for about 5 minutes with frequent stirring.
  14. Now pour the rest of stock and precooked meat.
  15. Then add the Zatarain's Creole Seasoning and salt, letting this come to a boil with frequent stirring.
  16. Fnallu, you wan tot reduce flame, cover with a lid and simmer for 45 minutes or until meat is tender. Serve over rice.

This looks really good. Unfortunately, alligator isn't available locally.


Well we have them local... but I'm not going out to get one! They go across our freeway down by Brownsville, Tx.
