Alligator Soup

- 1 lb. of Alligator meat, boneless shopping list
- 3 sticks of butter or margarine shopping list
- 1 c. of chopped celery shopping list
- 2 c. of chopped onion shopping list
- 1 c. of flour shopping list
- 3 c.of crushed tomatoes shopping list
- 1 tsp of garlic shopping list
- 9 c. of seafood/chicken stock shopping list
- creole seasoning (season to taste) shopping list
How to make it
- First you wan to trim all fat from alligator tail meat and cut into chunks.
- Pound the meat to tenderize pieces are 1 inch thikc.
- Then you want to cut into smaller pieces about 1 inch square.
- Season this with Zatarain's Creole Seasoning, mix thoroughly.
- Now you can take a large cooking pot place half of the butter.
- Melt over high heat and cook seasoned meat approx 10-15 min.
- You can stir occasionally to prevent sticking.
- Now remove browned meat and any browned drippings and set aside.
- Then you can add remaining butter, celery and onions and cook for approx. 5 minutes.
- You wan to make a roux by sprinkling in flour and stir to blend, and then cooking to light brown color.
- Then add tomatoes and garlic,cook approx 5 min.
- Then add about 3 c. of stock and stir to make sure roux and sediment is dissolved.
- You will need to cook for about 5 minutes with frequent stirring.
- Now pour the rest of stock and precooked meat.
- Then add the Zatarain's Creole Seasoning and salt, letting this come to a boil with frequent stirring.
- Fnallu, you wan tot reduce flame, cover with a lid and simmer for 45 minutes or until meat is tender. Serve over rice.
