How to make it

  • In a shallow dish, mix together the cajun seasoning, salt & pepper.
  • Coat chicken thighs on all sides with this mixture
  • Heat oil in a large heavy skillet (I used my deep electric frying pan) on medium/high heat.
  • Add chicken & cook until browned on both sides - about 3 mins per side.
  • Transfer to plate & set aside.
  • Add garlic to pan & saute 1/2 minute, then add all other vegetables.
  • Cook & stir about 3 minutes
  • Sprinkle flour over vegetables & stir to coat.
  • Slowly stir in the chicken broth & sherry, scraping up browned bits from the bottom of the skillet.
  • Add salt & pepper to taste.
  • Bring mixture to boil, stirring often
  • Reduce heat to medium/low
  • Place chicken back in the skillet
  • Cover & simmer about 50 - 60 mins until the chicken & vegetables are cooked & the sauce has slightly thickened
  • Serve & enjoy.
