Homestyle Skillet Chicken

- 6 chicken thighs shopping list
- 3 Tblspns cajun seasoning blend shopping list
- 3/4 tsp salt shopping list
- 3/4 tsp pepper shopping list
- 4 Tblspns vegetable oil shopping list
- 5 cloves garlic - minced. I used fairly good sized ones shopping list
- 6 - 8 new red potatoes - cut into 1/8's shopping list
- 1 1/2 med onions - cut into wedges shopping list
- 2 cups peeled baby carrots shopping list
- 3 ribs celery - halved lenthwise & chopped into 1/2" pieces shopping list
- 1 red bell pepper - seeded & cut into chunks shopping list
- 1 can sliced mushrooms - drained shopping list
- 3 Tblspns all-purpose flour shopping list
- 1 1/2 cups canned chicken broth shopping list
- 3/4 cup cooking sherry shopping list
- salt & pepper to taste shopping list
How to make it
- In a shallow dish, mix together the cajun seasoning, salt & pepper.
- Coat chicken thighs on all sides with this mixture
- Heat oil in a large heavy skillet (I used my deep electric frying pan) on medium/high heat.
- Add chicken & cook until browned on both sides - about 3 mins per side.
- Transfer to plate & set aside.
- Add garlic to pan & saute 1/2 minute, then add all other vegetables.
- Cook & stir about 3 minutes
- Sprinkle flour over vegetables & stir to coat.
- Slowly stir in the chicken broth & sherry, scraping up browned bits from the bottom of the skillet.
- Add salt & pepper to taste.
- Bring mixture to boil, stirring often
- Reduce heat to medium/low
- Place chicken back in the skillet
- Cover & simmer about 50 - 60 mins until the chicken & vegetables are cooked & the sauce has slightly thickened
- Serve & enjoy.
