Panfish Casserole

- 1 pound panfish fillets skinned shopping list
- 1/4 cup sliced black olives shopping list
- 1/2 cup chopped red pepper shopping list
- 1/2 cup chopped fresh mushrooms shopping list
- 2 scallions chopped shopping list
- 4 eggs shopping list
- 1/4 cup half and half cream shopping list
- 3/4 ricotta cheese shopping list
- 1/2 tsp. thyme leave shopping list
- 1/4 tsp. paprika salt & pepper shopping list
How to make it
- Cut fillets into 1 1/2" long pieces 1" wide. Layer olives and vegetables in bottom of pie shell. Lay fish evenly over vegetable mixture. In a seperate bowl, combine remaining ingredients. Mix well; pour over fish. Place on baking sheet with sides. Fill sheet with 1/4 inch of water. Bake at 350 degrees for 35-40 minutes
