Thai Mango Salad Recipe
This is a really colourful salad that is sweet and spicy. Add shredded pork or chicken for a main meal. This recipe is from the Canadian Living magazine.

Ingredients
  • 1/2 c coarsely chopped peanuts
  • 2 firm mangoes (about 1 kg or 2 lb in total)
  • 1 red pepper
  • 2 carrots,coarsley grated
  • 4 cups of torn mixed greens
  • 1/4 cup thinly sliced green onions
  • 2 Tbsp coarsley chopped fresh mint
  • 1/4 cup vegetable oil
  • 1 tsp grated lime rind
  • 2 Tbsp lime juice
  • 1 Tbsp fish sauce or soy sauce
  • 2 tsp sugar
  • 1 tsp minced hot pepper or 1/4 tsp hot pepper sauce
  • 1/4 tsp each salt and pepper

Directions
  1. In a frying pan, toast peanuts over medium heat until fragrant and dark golden (about 8 minutes). Set aside.
  2. Peel, pit and thinly slice mangoes lengthwise.
  3. Seed, core and thinly slice red pepper. Set aside.
  4. Dressing: In large bowl, whisk together oil, lime rind and juice, fish sauce, sugar, hot peppers, salt and pepper.
  5. Add mangoes, red pepper, carrots, mixed greens, green onions and mint. Toss to coat.
  6. Serve sprinkled with peanuts.
  7. Per serving 251 calories, 5 g protein, 15 g total fat (2 g sat fat,), 28 g carb, 5 g fiber, 403 mg sodium.
