Beefy Spanish Rice Recipe
I have had this recipe since the 70's and still love it and eat it often. It's easy to assemble and very tasty. One of those recipes that I return to over and over again.

Ingredients
  • 1 to 1 1/2 lbs lean hamburger
  • 1 cup uncooked white rice (converted rice is great)
  • 1 chopped green pepper
  • 1 clove garlic (or more if you are a garlic lover)
  • 1 (15 oz) can diced tomatoes
  • 2 cups water
  • 1 (6 oz) can tomato paste
  • 2 bay leaves
  • 1 to 2 ts chili powder depending on tastes
  • salt and pepper to taste

Directions
  1. Heat large skillet that has a lid to fit to medium high and brown the hamburger
  2. As hamburger begins to brown add the chopped green pepper and garlic to the skillet.
  3. If necessary drain the hamburger and return to stove.
  4. Add the water, diced tomatoes, rice, tomato paste, chili powder, salt and pepper and bay leaves.
  5. Stir it a bit to mix it all together
  6. Bring to a boil.
  7. Reduce heat to low, cover and simmer for 25 minutes.
  8. Remove bay leaves and serve and enjoy.
  9. I have also put it in tortilla's for a beefy spanish rice burrito which is very tasty to me anyways. :)
