My fave is Mint chocolate cookies, but this is wafers, similiar to cookies.

Ingredients
  • Wafers:
  • 2/3 c. Butter or Margarine, softened
  • 1/2 c. Sugar
  • 1/2 c. Packed brown sugar
  • 1/4 c. Milk
  • 1 Egg
  • 2 c. All-purpose flour
  • 3/4 c. Baking cocoa
  • 1 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1/4 tsp. Salt
  • Filling:
  • 2-3/4 c. Confectioners' sugar
  • 1/4 c. Half & half cream
  • 1/4 tsp. Peppermint extract
  • 1/4 tsp. Salt
  • Green food coloring

Directions
  1. In a mixing bowl, cream butter & sugars.
  2. Add milk & egg; mix well.
  3. Combine dry ingredients gradually add to creamed mixture & mix well.
  4. Cover & chill 2 hours or until firm.
  5. Roll chilled dough on a floured surface to 1/8-in. thickness.
  6. Cut with a 1-1/2-in. cookie cutter and place 1 in. apart on greased baking sheets.
  7. Bake at 375° for 5-6 minutes or until edges are lightly browned. Remove to wire racks to cool completely.
  8. Combine filling ingredients; spread on half of the cookies and top with another cookie.
  9. Yield: about 7-1/2 dozen.
