Chocolate Mint Wafers

- Wafers: shopping list
- 2/3 c. butter or margarine, softened shopping list
- 1/2 c. sugar shopping list
- 1/2 c. Packed brown sugar shopping list
- 1/4 c. milk shopping list
- 1 egg shopping list
- 2 c. all-purpose flour shopping list
- 3/4 c. baking cocoa shopping list
- 1 tsp. baking powder shopping list
- 1/2 tsp. baking soda shopping list
- 1/4 tsp. salt shopping list
- Filling: shopping list
- 2-3/4 c. confectioners' sugar shopping list
- 1/4 c. Half & half cream shopping list
- 1/4 tsp. peppermint extract shopping list
- 1/4 tsp. salt shopping list
- green food coloring shopping list
How to make it
- In a mixing bowl, cream butter & sugars.
- Add milk & egg; mix well.
- Combine dry ingredients gradually add to creamed mixture & mix well.
- Cover & chill 2 hours or until firm.
- Roll chilled dough on a floured surface to 1/8-in. thickness.
- Cut with a 1-1/2-in. cookie cutter and place 1 in. apart on greased baking sheets.
- Bake at 375° for 5-6 minutes or until edges are lightly browned. Remove to wire racks to cool completely.
- Combine filling ingredients; spread on half of the cookies and top with another cookie.
- Yield: about 7-1/2 dozen.
