Mexican Breakfast Eggs

- 6 eggs shopping list
- 3 hot dogs - Sliced into about 1/4-1/2 inch peices shopping list
- 1 white onion - Diced shopping list
- 2 roma tomatoes - Diced shopping list
- 2 Jalapenos- Diced shopping list
- 2 Tablespoons oil shopping list
- 1/2 Cup Cojita cheese shopping list
- salt to taste shopping list
- sauce: shopping list
- 2 roma tomatoes - Cut in 1/2 shopping list
- 1/2 chicken Boullon Cube shopping list
- 1 Bunch cilantro shopping list
- 1 Cup water shopping list
How to make it
- Place all ingreients for sauce into pan except cilantro and bring to boil. About 10 minutes. Let cool and place into blender, add cilantro to blender also. Blend until smooth and set aside.
- Place oil into pan once warm add hotdogs and cook until they are golden brown then add eggs, mixing them so they dont stick to bottom. (like scrambled eggs) After about 5 minutes add onion, tomatoes and jalapenos. Keep mixing until eggs are cooked completely.
- Add the sauce to the eggs and mix again. Remove from heat. Add salt to taste. Sprinkle with cheese.
- Serve with beans and tortillas.
