How to make it

  • Cream butter and sugar till light. Add eggs and vanilla and mix well. Sift together flour, baking powder, cinnamon and 1/2 tsp salt.Add alternately with milk to the creamed mixture, beating smooth after each addition. Stir in lemon juice. Drain berries, reserving the syrup. Carefully fold in berries.
  • Pour batter into a well greased and floured 5 1/2 cup mold; I used a bundt pan. Cover with foil and tie with a string. Place on a rack in a deep saucepan. Add boiling water, 1" deep. Cover and steam for 2 1/2 hours on low heat, adding water if needed. Cool 20 minutes then unmold. Slice and serve with Blackberry Sauce.
  • Makes: 8 servings
  • Blackberry Sauce: In a saucepan add water to reserved syrup to make 1 1/2 cups. Mix 1/4 cup sugar and 2 Tbsp cornstarch together. Gradually stir this into the syrup mixture. Cook and stir over medium heat until bubbly. Cook and stir 1 more minute. Stir in 1 Tbsp lemon juice.
  • Makes: 1 2/3 cup
