Steamed Blackberry Pudding With A Blackberry Sauce

- 1/2 cup butter shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- 1/2 tsp vanilla shopping list
- 2 cups sifted all purpose flour shopping list
- 3 tsp baking powder shopping list
- 1/2 tsp ground cinnamon shopping list
- 3/4 cup milk shopping list
- 2 Tbsp lemon juice shopping list
- 1 - 16 oz can blackberries or home canned shopping list
- Blackberry Sauce (recipe follows) shopping list
How to make it
- Cream butter and sugar till light. Add eggs and vanilla and mix well. Sift together flour, baking powder, cinnamon and 1/2 tsp salt.Add alternately with milk to the creamed mixture, beating smooth after each addition. Stir in lemon juice. Drain berries, reserving the syrup. Carefully fold in berries.
- Pour batter into a well greased and floured 5 1/2 cup mold; I used a bundt pan. Cover with foil and tie with a string. Place on a rack in a deep saucepan. Add boiling water, 1" deep. Cover and steam for 2 1/2 hours on low heat, adding water if needed. Cool 20 minutes then unmold. Slice and serve with Blackberry Sauce.
- Makes: 8 servings
- Blackberry Sauce: In a saucepan add water to reserved syrup to make 1 1/2 cups. Mix 1/4 cup sugar and 2 Tbsp cornstarch together. Gradually stir this into the syrup mixture. Cook and stir over medium heat until bubbly. Cook and stir 1 more minute. Stir in 1 Tbsp lemon juice.
