How to make it

  • Combine prunes, sugar and water then slowly roast in the oven.
  • Blend and puree prune mixture then flavor with rum.
  • Whip egg whites and granulated sugar to an oily constancy.
  • Beat egg yolks until smooth then add to whisked egg whites.
  • Carefully fold in flour.
  • Heat two omelet pans and grease with unsalted butter.
  • Pour in batter then carefully bake on low heat for 3 minutes.
  • Turn omelets and slowly bake other side.
  • Heat prune mix then beat with a small quantity of cream until smooth.
  • Coat omelets with prune mix then fold and serve on plates dusted with powdered sugar.
