Queens Park Sizzle

- 1/4 c sugar shopping list
- 1/4 c water shopping list
- 24 fresh mint leaves shopping list
- 3 Tbs fresh lime juice shopping list
- 1/2 c white rum shopping list
- 4 c (about) crushed ice shopping list
- 1 tsp Angostura bitters shopping list
How to make it
- Bring sugar and water to boil in small saucepan,stirring till sugar dissolves. Boil 1 min. Transfer simple syrup to small bowl and chill till cold.
- Place 2 highball glasses in freezer to chill 15 mins. Combine 12 mint leaves,1-1/2 Tbs lime juice and 1-1/2 Tbs simple syrup in each chilled glass. Using muddler or handle of wooden spoon,mash mint mixture in each glass until mint begins to break apart.
- Add 1/4 c rum then 1 c crushed ice to each glass;swizzle or stir to blend. Add more crushed ice to each glass;swizzle or stir to blend.
- Add more crushed ice to each glass to fill glass completely,mounding at top of glass.
- Drizzle 1/2 tsp angostura bitters over top of ice in each glass and serve with straw.
