Potato Spinach Balls

- 4 potatoes peeled boiled and mashed shopping list
- 10 ounce package frozen chopped spinach thawed and well drained shopping list
- 2 eggs shopping list
- 1/4 teaspoon nutmeg shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1 cup grated pepper jack cheese shopping list
- 1/2 cup flour shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- cooking spray shopping list
How to make it
- Lightly brush a baking tray with vegetable oil or cooking spray then set aside.
- In medium bowl combine potatoes, spinach and eggs then beat with mixer until well-blended.
- Season with nutmeg and cayenne pepper then add cheese and 4 tablespoons of the flour.
- Stir until flour is well-blended.
- Spread remaining flour onto a glass plate and season with salt and pepper.
- Using two teaspoons form spinach mixture into 1-inch balls.
- Drop spinach balls onto the flour covered plate.
- Roll balls in the flour to coat and place on the prepared baking sheet.
- Place the tray in the refrigerator for 20 minutes before baking.
- Preheat oven to 450.
- Remove balls from refrigerator and spray lightly with cooking spray and bake 14 minutes.
