How to make it

  • Preheat oven to 450
  • Trim excess fat from rack of lamb with a sharp knife
  • Generously coat with salt and pepper
  • Heat sesame oil in a skillet and brown rack on each side for about 2 minutes per side. Remove from heat
  • In a small bowl combine mustard, balsamic vinegar, sage and thyme
  • Coat rack with mustard mixture thoroughly
  • Combine rosemary, bread crumbs, minced garlic, parsley and olive oil. Mix well
  • Coat the rack with the breading, working it into the rack by hand
  • Place on baking dish and roast for approx 20 minutes for medium rare
  • Allow to rest for at least 10 minutes before dividing
