How to make it

  • Add first 9 ingredients alternatively in layers into an alfoil baking dish (cooks quicker than a thicker metal pan)
  • Drizzle with oil in between layers. (gently rub the oil over the eggplant with a brush or fingers)
  • Cover with a sheet alfoil.
  • Place the dish in the oven on a flat tray.
  • Bake for 1/2 hour approx.
  • Place 4 crackers on a serving plate
  • Spoon the cooked mix onto the rice crackers
  • Sprinkle with sweet chilli sauce
  • Sprinkle with cheese. Enjoy
