Vegetarian Nadicoise

- Heat oven to 450 deg shopping list
- 1/2 cup of dry vegetarian mince - soaked in a large mug with 1 veggie cube in hot water. shopping list
- 1 medium eggplant cut into 0.5cm round slices shopping list
- 1/2 red salad onion sliced in thin wedges 0.5cm - slice from top to bottom. shopping list
- 1/2 red capsicum cut into medium thumb sizes shopping list
- 4 cloves garlic chopped roughly shopping list
- 1 - 1/2 red egg shaped roma tomato (these are less acidic + better for sensitives + arthritics) shopping list
- 1 young medium/slender zucchini sliced into rounds (sounds like female version :) shopping list
- 1/4 teaspoon of rosemary shopping list
- dash or iodised salt shopping list
- 4 rice crackers (sundried tomato and basil crackers) shopping list
- 1/4 cup olive oil shopping list
- 1 teaspoon sweet chilli with ginger sauce to drizzle on top shopping list
- 1 tablespoon grated parmesan cheese to sprinkle on top shopping list
How to make it
- Add first 9 ingredients alternatively in layers into an alfoil baking dish (cooks quicker than a thicker metal pan)
- Drizzle with oil in between layers. (gently rub the oil over the eggplant with a brush or fingers)
- Cover with a sheet alfoil.
- Place the dish in the oven on a flat tray.
- Bake for 1/2 hour approx.
- Place 4 crackers on a serving plate
- Spoon the cooked mix onto the rice crackers
- Sprinkle with sweet chilli sauce
- Sprinkle with cheese. Enjoy
