- 2 gallons water shopping list
- 5 lb. stewing hen shopping list
- 2 lb. boneless pork, in pieces shopping list
- 2 lb. varmint (opt) shopping list
- 1st vegetable batch: shopping list
- 2 c. okra shopping list
- 3 c. chopped onions shopping list
- 3 quarts cubed potatoes shopping list
- 3 quarts chopped tomatoes shopping list
- chopped celery, celery leaves and parsley to taste shopping list
- 2nd vegetable batch: shopping list
- 6 c. lima beans shopping list
- 6 c. corn kernels shopping list
- 1/2 c. minced green pepper shopping list
- 1 onion, chopped shopping list
- 4 slices bacon, cooked and crumbled shopping list
- 1 t. sugar shopping list
- salt and pepper to taste shopping list
- worcestershire sauce and louisiana hot sauce to taste shopping list
How to make it
- Put the hen, cleaned and dressed varmint, and pork in the water, bring to a boil, then a low simmer. Note that the vegetables are in two groups? That's because you add them in two batches. Add the first batch of vegetables (okra, etc.) and simmer for hours, until very done. Add the second batch of vegetables and cook until done (chicken and pork should have fallen to shreds by now). Add crumbled bacon, then seasonings to taste.

Since I'm from Western Kantuck, I was weaned on burgoo and succotash. Thanks for posting this treasure. I'll omit the varmint tho ;>)
