VEGTABLES AU GRATIN

- 8 CUPS (8X250 ML) ASSORTED vegetables CUT INTO LARGE, BITE-SIZED CHUNKS (TRY A SELECTION FOR THE FOLLOWING: shopping list
- cauliflower, broccoli, carrots, FRENCH (STRING) beans, green peas, baby potatoes, asparagus, squash, pumpkin, sweet potato) shopping list
- 1/3 - 2/3 CUP butter (SORRY I DON'T LIKE margarine) shopping list
- 1/4 TEASPOON YELLOW asafetida powder (IF YOU CAN'T FIND IT - PEEL AND SLIVER 2 garlic GLOVES) shopping list
- 1/4 TEASPOON nutmeg shopping list
- 2/3 CUP PLAIN flour (WHITE) shopping list
- 5 CUPS (1.25 LT) WARM milk shopping list
- 2 TEASPOONS salt shopping list
- 3/4 TEASPOON GROUND white pepper (NOT black pepper) shopping list
- 250 G GRATED cheddar cheese shopping list
- 1 TABLESPOON EXTRA butter (OPTIONAL) shopping list
- 2 TABLESPOONS CHOPPED FREASH parsley shopping list
How to make it
- LIGHTLY STEAM THE VEGTABLES UNTIL COOKED BUT STILL A LITTLE FIRM.
- MELT BUTTER IN A MEDIUM SAUCEPAN OVER MODERATE HEAT.
- REMOVE PAN FROM HEAT.
- ADD THE ASAFETIDA POWDER AND NUTMEG.
- STIR IN THE FLOUR WITH A WOODEN SPOON TO MAKE A SMOOOTH PASTE.
- GRADUALLY ADD THE MILK, STIRRING CONSTANTLY.
- RETURN THE PAN TO THE HEAT AND BRING THE SAUCE TO A BOIL, STILL STIRRING.
- REDUCE THE HEAT TO LOW AND SIMMER, STIRRING CONSTANTLY FOR 1 MINUTE OR UNTIL THE SAUCE IS THICK AND SMOOTH.
- ADD THE SALT, PEPPER AND HALF THE GRATED CHEESE.
- ADD THE STEAMED VEGETABLES AND MIX WELL.
- SPOON THE VEGTABLES INTO A BUTTERED BAKING DISH (OR USE 'SPRAY 'N COOK").
- COVER THEM WITH THE REMAINING GRATED CHEES AND DOT WITH LITTLE PIECES OF BUTTER (OPTIONAL).
- BAKE IN A PREHEATED 205C/400f FOR 25 MINUTES OR UNTIL THE TOP IS GOLDEN BROWN.
- GARNISH WITH CHOPPED FREASXH PARSLEY AND SERVE HOT.
- PS: IT IS DELICIOUS WITH A LIGHT SOUP AND BREAD ACCOMPANIMENT.

Although I'm an obligate carnivore by inclination I love veggies. This is a really great flavor combo and a wonderful way to treat the veggies. I mean who wants mush? I'd maybe give the potatoes a bit more cooking than the rest of the stuff, or leave...more
