How to make it

  • Jalapeno chiles should be seeded and finely chopped. Use 2 or 3 or Prepare Hot Chile Sauce and set aside. Mix remaining ingredients. Shape into 6 patties, each about 1/2 inch thick. Brush grill with vegetable oil. Grill patties about 4 inches from the coals, turning once, until they are done to your taste, 4 to 6 minutes on each side for medium doneness. Serve with Hot Chile Sauce.
  • GRILLED JALAPENO BUFFALO BURGERS: Set oven control to grill. Place patties on rack in the grill pan. Grill with the tops about 3 inches from the heat, turning once, until done. Grill for 4 to 6 minutes for medium done.

    Okay with beef and maybe great with bison. Twas years ago, in Montana, that I brought down a mighty bison with my trusty Winchester, then we screwed up and stewed it. I'll know better next time. I suggest adding some sort of binder, like bacon or an egg, to this. Buffalo is super lean and the burgers won't stay together. Five Sioux arrows. RJ
