Grilled Asparagus

- Farmers'-market-fresh asparagus (1 lb. or more) shopping list
- extra virgin olive oil shopping list
- kosher salt shopping list
- Freshly ground pepper shopping list
How to make it
- Preheat grill to high -- all burners @ full blast.
- Snap ends off asparagus where they naturally break.
- With a gently hand and vegetable peeler, remove the fibrous skin on the ends.
- Drizzle with a little oil (<1T should do).
- Sprinkle with S & P to taste.
- Gently lay asparagus on grill (perpendicular to grates so they don't fall through).
- Cover lid immediately.
- After about 2 minutes, roll them to char other side.
- Cover, then remove after about 2 more min., or until lightly charred and done to your liking.
- Boost flavor when serving: squirt on some lemon juice, sprinkle with lemon zest and/or fresh herbs, drizzle with balsamic, or just go naked!
Drizzle and season.
Close
Lay on the HOT grill strategically.
