Londonderry Cheesecake

- pastry crust if desired or buttered and dusted with graham cracker crumbs ( which I use ) shopping list
- 4, 8 oz pkg cream cheese shopping list
- 1 cup sharp cheddar cheese very finely grated shopping list
- 1 3/4 cup sugar shopping list
- 1/2 tsp vanilla shopping list
- 1/2 tsp lemon zest shopping list
- 1/2 tsp orange zest shopping list
- 4 whole eggs, plus 2 egg yolks shopping list
- 1/4 cup beer shopping list
- 1/4 cup heavy cream shopping list
How to make it
- Cream the cream cheese smooth and fluffly
- Combine the sugar, vanilla, lemon and orange zest and beat smooth into cream cheese
- Add the eggs and yolks 1 at a time, beat only to blend
- Stir in the beer and cream
- Pour mixture into a pastry crust 9 inch springform or graham cracker crumb l dusted pan
- Bake in a preheated oven 400F about 10 to 12 mins or top is light brown
- Reduce heat to 250F and bake until cake is firm, about 2 hours ( less time is needed if pastry crust is omitted )
- Cool on wire rack
- remove sides and chill cake very well
