Flan Custard Recipe
Got this recipe from a co-workers wife who was a Super Spanish cook It's a smooth custard with a caramelized sauce

Ingredients
  • 3/4 cup sugar
  • 5 eggs well beaten
  • 1 cup sweetened condensed milk
  • 1 can water
  • 1 tsp vanilla
  • 1/4 tsp lemon juice
  • 1/4 tsp grated lemon peel

Directions
  1. Place sugar in skillet and caramelize by cooking over medium heat
  2. Stir constantly with wooden spoon till sugar melts and turns golden brown to medium brown
  3. Pour and spread quickly in bottom and side of baking dish
  4. Combine remaining ingredients in bowl
  5. Mix well
  6. Pour over caramelized dish
  7. Place dish into another swallow pan filled with 1" water
  8. Bake 1 hour or till knife (inserted 1/2" from middle) comes out clean
  9. Loosen edges with spatula
  10. Cool

Alterations


instead of using a can of water use a can of regular milk or evap milk.. and try brown sugar for the carmelization. (mixing up in blender makes it nice and smooth ).mixing up the egg whites and yolks seperate then adding to blender makes it SUPER smooth and creamy just another way of making this with a spanish/mexican flair
