How to make it

  • Preheat oven to 350 and line a baking sheet with aluminum foil.
  • Grate the slices of bread into crumbs. Food processor makes quick work of this. I so this with the stale end of a loaf then put it in an air tight container in the refridgerator. Using my choice of bread I cut many calories and still get the job done.
  • Mince the fresh herbs, onion and garlic. You don't want any big lumps or your meatballs won't hang together so well.
  • Combine all the rest of the ingredients into a large mixing bowl. I use my well washed hands and try to remember where I put my wedding rings after.
  • Using a table spoon, scoop a bit of the mixture and roll in your hands to form a ball and place it on the cooking sheet. Repeat until it is all gone.
  • Bake for 30 - 40 minutes.
  • Serving suggestions: In marinara over noodles, meatball subs as an appetizer.
