Mexican Shrimp Tostadas - Tostadas De Camarones

- vegetable oil for frying shopping list
- 4-6 corn tortillas shopping list
- 1 lb (450 g) cooked shrimp, peeled and deveined shopping list
- 1-2 ripe avocados, peeled, pitted, and diced shopping list
- 1 cup (250 ml) fresh, canned, or thawed frozen corn kernels shopping list
- 4 oz (100 g) shredded Monterey Jack or cheddar cheese shopping list
- 1-2 tomatoes, diced shopping list
- 1/2 red onion, chopped shopping list
- 2 Tbs (30 ml) lime or lemon juice shopping list
- 2 Tbs (30 ml) chopped fresh cilantro (coriander leaves) shopping list
- 1 tsp (5 ml) ground cumin shopping list
- hot sauce to taste shopping list
- salt and freshly ground pepper to taste shopping list
How to make it
- Heat the oil in a skillet and fry the tortillas one at a time until crisp. Drain on paper towels. Combine the remaining ingredients in a bowl and toss gently to combine. Spoon the shrimp mixture over the tortillas and serve immediately. Serves 4 to 6.
