Plump Lemony Blueberry Muffins

- 2 Large eggs shopping list
- 1 Cup sugar shopping list
- 1/2 Cup Veg. oil shopping list
- 1/2 vanilla extract shopping list
- 2 Cups All Purpose flour shopping list
- 1/2 tsp. salt shopping list
- 1/2 tsp. baking soda shopping list
- 1 Cup sour cream shopping list
- 1 Cup blueberries (I'd suggest cutting them into pieces if they are large so that you do not wind up with a big blueberry messy surprise. ;)) shopping list
- lemon zest from 1 Large Lemon shopping list
How to make it
- Preheat to 400
- Line Muffin Pan or Grease them (12)
- Sift together the Flour, Salt and Baking Soda, set aside.
- In seperate bowl, beat eggs and then slowly mix in sugar, while still beating, blend well.
- Slowly pour in the oil, while still beating the mixture
- Stir in Vanilla
- In parts, mix dry mixture into the egg mixture, alternating with adding the sour cream, blend until smooth.
- Fold in blueberries and Lemon Zest
- Bake for 20 mins.
- Cool and Enjoy! :)
