How to make it

  • Rub chicken with your chosen spice, then place on a medium-high heated frying pan with olive oil to cook. Turn after about 15 minutes and continue cooking until the chicken is cooked through.
  • While your chicken is cooking, make your pesto!
  • If you don't have a food processor or magic bullet, buy pre-made pesto. in a small fry pan on medium-high heat, roast the pine nuts, but do not burn them! Place ingredients into magic bullet in this order: olive oil, basil, garlic, pine nuts. Blend for about 2 minutes. Take some of the pesto out and save for future use (keep in fridge), then add the miracle whip, and blend another 20 seconds. Refridgerate after until you need it.
  • cut up your bagette into your number of servings, slice each piece in half, and lightly butter each half. Place in a frying pan, buttered side down, until the bread is toasted.
  • Take your chicken off the frying pan, and slice diagonally so it will fit onto the sandwich better. On the top piece of bun, spread pesto-mayo, add some baby spinach, and a slice of cheese. Arrange your chicken on the other half, and put the two pieces together. Wait about a minute for the cheese to start melting, and enjoy!!
  • Alternate: homemade chunky cranberry spread and Bree cheese
  • Alternate: roasted red pepper and garlic havarti
