TexMex Chicken Soup

- 1 lbs chicken thighs - stewed in water (just to barely cover) seasoned with 1 Tablespoon cajun seasoning, 1 Teaspoon each cumin and chili powder. Remove chicken and debone - reserving broth shopping list
- Add chicken back to broth, and add shopping list
- 1 15 oz can navy beans, drained and rinsed shopping list
- 1 package frozen peppers, celery and onion shopping list
- 1 can Rotel tomatoes and chilis (with cilantro) - can use the HOT variety if you wish but not for kids. shopping list
- 1 15 oz can whole kernel corn - with juice shopping list
How to make it
- Cook chicken, cool and debone then add back to broth. Add all other ingredients and cook over medium heat just until the peppers, onions and celery are tender. Serve in bowls along with fritos or tortilla chips crushed into bowls. Can add a touch of sour cream to cool the heat for children.
- NOTE: to speed this up, you could use chicken breasts from the freezer case - cut in thin strips - and cook along with the other ingredients.
