- 6 Pound Goose,dressed out shopping list
- salt and pepper shopping list
- 1/2 Pound chicken livers shopping list
- The Goose Liver and Heart shopping list
- 2 Cups chicken broth shopping list
- 1/2 Pound sausage meat shopping list
- 1 Granny Smith apple,cored,diced shopping list
- 1/4 Cup fresh mushrooms,chopped shopping list
- 1 Cup Soft bread Crumbs shopping list
- 1/2 teaspoon dried rosemary shopping list
- 1/4 teaspoon dried tarragon shopping list
- 4 Slices bacon shopping list
- 1 Cup white wine shopping list
- 1 Cup orange juice shopping list
- 1 Tablespoon Grated orange rind shopping list
- 1 Tablespoon lemon juice shopping list
- 1/2 Cup water shopping list
- 1 Cup heavy cream shopping list
- 2 Tablespoon currant jelly shopping list
How to make it
- Season goose inside and outside with salt and pepper.
- Place Chicken LIvers,Goose LIver,and Heart,and broth in saucepan.
- Simmer until livers are nice an tender,drain,discard liquid.
- Chop livers and heart in very fine pieces.Set aside.
- In skillet,fry the sausage meat until no longer pink.
- Remove meat.
- Discard drippings.
- Combine liver mixture,sausage,apples,mushrooms,bread crumbs,rosemary,and tarragon.
- Combine white wine,orange rind,and lemon juice in a bowl.
- Stuff that goose with bread mixture.
- Close and truss the goose.
- Place that prized bird on a rack in a roasting pan.
- Lay the 4 Strips of Bacon across the breast.
- Roast,uncovered at 450 degrees for 15 minutes.
- Reduce heat to 350 degrees.
- Continue to roast about 2 hours longer,or until tender.
- Baste frequently with wine mixture.
- Remove bird to a warm platter,drain excess grease from dripping,discard grease.
- Return remaining drippings to roasting pan,add water.
- Have heat under roasting pan on low.
- Stir to loosen any remainging browned bits.
- Slowly stir in cream and then jelly.
- Heat until hot...do not boil.
- Serve sauce separately with goose and dressing.
