How to make it

  • Season goose inside and outside with salt and pepper.
  • Place Chicken LIvers,Goose LIver,and Heart,and broth in saucepan.
  • Simmer until livers are nice an tender,drain,discard liquid.
  • Chop livers and heart in very fine pieces.Set aside.
  • In skillet,fry the sausage meat until no longer pink.
  • Remove meat.
  • Discard drippings.
  • Combine liver mixture,sausage,apples,mushrooms,bread crumbs,rosemary,and tarragon.
  • Combine white wine,orange rind,and lemon juice in a bowl.
  • Stuff that goose with bread mixture.
  • Close and truss the goose.
  • Place that prized bird on a rack in a roasting pan.
  • Lay the 4 Strips of Bacon across the breast.
  • Roast,uncovered at 450 degrees for 15 minutes.
  • Reduce heat to 350 degrees.
  • Continue to roast about 2 hours longer,or until tender.
  • Baste frequently with wine mixture.
  • Remove bird to a warm platter,drain excess grease from dripping,discard grease.
  • Return remaining drippings to roasting pan,add water.
  • Have heat under roasting pan on low.
  • Stir to loosen any remainging browned bits.
  • Slowly stir in cream and then jelly.
  • Heat until not boil.
  • Serve sauce separately with goose and dressing.
