Ingredients
  • 4 1/3 c. sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 c. vegetable shortening
  • 1/2 c. butter or margarine softened
  • 1 c. granulated sugar
  • 1 c. firmly packed light brown sugar
  • 2 eggs
  • 1 tsp. vanilla

Directions
  1. Beat shortening, butter and sugars until well mixed; beat in eggs
  2. and vanilla. Stir together flour, baking soda and salt. Add flour mixture to egg
  3. mixture and stir to combine until soft dough forms.
  4. Divide dough into 6 equal portions; shape into rolls about
  5. 1 1/2 inches in diameter, wrap each in plastic wrap or foil and freeze.
  6. Or, if you prefer, flavor the different portions as directed below.
  7. To bake, slice solidly frozen rolls about 1/4-inch
  8. thick; arrange cookies 2-inches apart on ungreased cookies
  9. sheets and bake in 350 degrees oven for 10 minutes, until lightly
  10. browned. Transfer at once to wire rack to cool.
  11. Variations
  12. Coconut Cookies: Mix 1/2 cup flaked or toasted coconut
  13. into one sixth of master recipe dough. Shape and freeze.
  14. Slice and bake as directed. Makes 30 cookies.
  15. Nutty Cookies: Mix 1/2 cup coarsely chopped
  16. pecans, walnuts or peanuts into one sixth of
  17. master recipe dough. Shape and freeze.
  18. Spicy Cookies: Mix 1/2 to 1 teaspoon ground
  19. cinnamon and 1/4 to 1/2 teaspoon ground nutmeg or mace or 2
  20. teaspoons pumpkin pie spice into one sixth of the master recipe
  21. dough. Shape and freeze.
  22. Chocolate Cookies: Mix 1 square melted and
  23. cooled unsweetened chocolate into one sixth of the master
  24. recipe dough. If desired, add 1/2 cup coarsely chopped nuts.
  25. Shape and freeze.
  26. Cherry Cookies: Mix 1/4 c. finely chopped
  27. candied cherries (both red and green are nice for Christmas)
  28. in one sixth of the master dough.
  29. Shape and freeze.
  30. Butterscotch or Maple Cookies: Mix 1/2
  31. teaspoon of butterscotch or maple flavoring into one sixth of
  32. the master recipe dough. Shape and freeze.

I know so many people that are fans of icebox cookies, I look forward to trying these. I like the idea of pecans and butterscotch chips. = )


This is genius! I hate baking but if I could do the measuring part only once and have several rolls to bake off when I feel like it, I'd prolly do it more! How long can these stay in the freezer?
