How to make it

  • Mix all ingredients except zucchini, onion and Parmesan cheese in a blender.
  • Then in a large bowl, gently stir zucchini and onion with the blended ingredients.
  • Pour into a 9" unbaked pie shell or you can also make individual sized pies.
  • Sprinkle with freshly grated nutmeg.
  • Bake at 425 degrees for 20 minutes then reduce to 325 for 30 minutes
  • Makes enough to serve 4-6 people.

    Very interesting, flagged as such. I just can't wrap my mind around the ingredients especially with the sugar. So is this more like a dinner veggie main or side dish OR a dessert like pumpkin pie. I'm so confused...
