How to make it

  • Smother the two pieces of orange roughy in jerk seasoning.
  • Place two quarts water into a large pot and heat to boiling. Add 2 Tbl sugar to the water. Add the shucked corn. Cook for 5 minutes. Remove. Using a sharp knife, cut the kernels from the ears. Put aside.
  • I used an electric griddle, but an electric skillet or a regular large skillet would work equally well. Bring the griddle to max temperature. Liberally sprinkle the griddle with oil Place the two jerked pieces of roughy on the griddle and begin simmering.
  • Slice the tomatoes. Salt and pepper the slices and divide them between the two servings.
  • When the fish begins to turn white and the bottoms brown, flip once and douse with the Margarita mix. Add the corn kernels and 1 tablespoon butter on the side of the griddle and fry the corn in the juices from the jerked fish. Cook the fish until white through and through, and corn is begins to brown.
  • Remove the fish to the two serving dishes. Scoop the corn on the dishes as a side. Salt and pepper to taste.

    Sorry, I've been away. I would think that either would work with this recipe. You don't have to turn the fish, so you don't have to worry about it breaking up.

    Wow, just found this one Dave. Sounds terrific. Don't get much orange roughy out here - how about halibut or cod? I would think it would work. Yum, a meal in one - thanks so much.
