Ingredients

How to make it

  • Preheat oven to 350
  • In a mixing bowl, combine crackers and 4 tablespoons of butter until well blended
  • Press into the bottom and 1 inch up the sides of an 8 inch pie dish to form crust
  • Refrigerate until needed
  • Melt remaining 2 tablespoons butter in a heavy skillet over medium heat
  • Saute onions and garlic slowly until tender, about 12 minutes
  • To spice it up a bit, I add a little cayenne pepper to this mixture
  • Arrange onions in pie crust
  • Beat eggs, milk, chives and salt until well blended
  • Pour the mixture over the onions
  • Sprinkle with cheese and paprika
  • Bake for 35 minutes or until a knife inserted in center comes out clean
  • Garnish with parsley
  • Serve hot or at room temperature
