The Spirit Of Apple Prune Pancake

- FILLING shopping list
- Boiled rosehip tea herbs (save the herb contents from your cuppa) shopping list
- 1/2 apple cut into quarter slices shopping list
- 1/2 cup water shopping list
- 4 pitted soft prunes shopping list
- PANCAKE shopping list
- 1 egg beaten shopping list
- 1/2 cup soy drink shopping list
- Approx 1/2 cup Gluten Free SR Flour (lighter, fluffier and healthier than wheat flour) shopping list
- 1/2 tablespoon peanut oil shopping list
How to make it
- FILLING
- Stew apple and prunes until apples are semi soft (3 mins)
- 3 tablespoons fruity berry soy yogurt (or your choice)
- PANCAKE
- Pour mixture into hot frying pan
- Put lid on so top gets firm bubbles and is half cooked.
- Turn pancake over after bottom is golden brown 3 mins
- Cook for a further 2 minutes.
- Place the fruit filling onto the whole pancake.
- Place the yogurt onto 1/2 of the pancake.
- Fold in half.
- Sprinkle icing sugar on top and serve. Enjoy:)
