How to make it

  • puree fresh pineapple with sugar, rum and water in a high speed blender
  • place in saucepan and bring to a boil and then simmer
  • dissove gelatin in 2 tbs water
  • then stir into pineapple liquid and stir well to completely dissolve
  • Place mixture in a bowl and chill till cool
  • whip cream and fold into cooled mixture, mixture need not be fully gelled
  • Place mixture in a pineapple mold
  • freeze firm
  • carefully unmold and surround by drained rum pineapple cubes and fresh strawberries
