Frozen Pineapple Mousse

- 1 cup fresh cubed pineapple shopping list
- 3/4 cup water shopping list
- 1 cup sugar or to taste shopping list
- 3 tbs light rum shopping list
- 1 pkt unflavored gelatin shopping list
- 1 cup cream whipped shopping list
- pineapple cubes shopping list
- 2 tbs light rum shopping list
- fresh strawberries shopping list
- pineapple mold shopping list
How to make it
- puree fresh pineapple with sugar, rum and water in a high speed blender
- place in saucepan and bring to a boil and then simmer
- dissove gelatin in 2 tbs water
- then stir into pineapple liquid and stir well to completely dissolve
- Place mixture in a bowl and chill till cool
- whip cream and fold into cooled mixture, mixture need not be fully gelled
- Place mixture in a pineapple mold
- freeze firm
- carefully unmold and surround by drained rum pineapple cubes and fresh strawberries
