Quick N Easy Corn And Black Bean Salsa

- 1 can black beans, drained and rinse shopping list
- 1 c +/- niblet or shoepeg corn shopping list
- 1 can Rotel tomatoes with Lime & Cilantro shopping list
- 1 med/large ripe red tomaote, diced shopping list
- approx 1/4 c jarred roasted red peppers, diced (or roast your own, but that won't be quick n easy...lol) shopping list
- 1/4 red onion, chopped shopping list
- 1 lime wedge shopping list
- 1 t chopped garlic shopping list
- 1 t chopped cilantro (I had dried, so I used it. Fresh would be better) shopping list
How to make it
- Combine all ingredients and chill about 45 minutes before serving, to give flavors time to marry.
- Serve with tortilla chips and sour cream alongside your favorite mexican dishes!
- ** I only had a bag of frozen niblet corn, which cooks in just a couple of minutes, so I cooked it, and stuck it in the freezer to cool while I did my chopping **
