How to make it

  • Heat grill. Cut six 10" squares of heavy-duty aluminum foil. Zest juice of 1 lemon;trim and slice remaining lemon. In med. bowl,whisk together olive oil,3 Tbs lemon juice,2 tsp lemon zest,white wine and garlic until blended. Stir in chopped scallions and parsley.
  • Season tilapia or halibut with salt and ground black pepper'if desired. Place 1 piece of fish in center of each foil square.
  • Pour lemon-oil mixture evenly over fish. Top with lemon slices. Fold foil over fish and press to seal edges tightly. Grill 8 mins or till fish flakes with fork. Garnish with fresh parsley,if desired.
