How to make it

  • Preheat oven to 375F, grease a 9" springform pan.
  • In a medium bowl, whisk together flour, mesquite flour, cocoa, baking powder, baking soda, salt and nutmeg.
  • In a large bowl, cream cream cheese and sugar.
  • Add egg and vanilla, beating well.
  • Add half the flour mixture to the creamed ingredients, blending in slightly, then add buttermilk. Follow with remaining dry ingredients.
  • Spread batter in prepared pan, smoothing to the edges.
  • Top with chocolate chips.
  • Bake for 35 minutes, cool completely in the pan before unmoulding.

    Hi! The bean pods of the mesquite tree can be dried and ground into flour, adding a sweet, nutty taste to breads, or used to make jelly or wine. When used in baking, the mesquite bean flour is used in combination with other flours – substitute ¼ cup-to-½ cup mesquite flour in each cup grain flour. Mesquite bean flour is used in breads, pancakes, muffins, cakes and even cookies. Mesquite powder is also high in calcium, magnesium, potassium, iron and zinc, and is rich in the amino acid lysine.
