Kotopoulo Fournou (greek Chicken)

- 1 3 lb roasting chicken, cut in half. shopping list
- 2 Tbsp. olive oil. shopping list
- 8 cloves of garlic. shopping list
- 1 1/2 tsp. Greek oregano. shopping list
- 1 1/2 tsp. coarse salt. shopping list
- 1 1/2 tsp. coarsely ground black pepper. shopping list
- Juice from 1-2 lemons. shopping list
How to make it
- Pre-Heat oven to 350 degrees.
- Line a roasting pan or baking dish with foil. Mix the spices all together, except the garlic.
- Brush both sides of the chicken with lemon juice and oil then sprinkle with seasoning mix. Place the chicken bone-side up on in baking pan. Top with the garlic cloves.
- Roast uncovered for 50 minutes to 1 hour. Check wtih a meat thermometer to make sure its done. If the skin isn’t browned, place under the broiler and cook for another minute.
- Remove from oven, and allow the chicken rest for 15 minutes before serving.
