Use soft oatmeal cookies for this... or any other soft cookie....This makes a delightful quick and easy dessert.... Great for the summer time..

In a small chilled bowl combine whipping cream and the 2 tablespoons of honey.
Beat with chilled beaters of a electric mixer on medium speed until soft peaks form.
Fold in sour cream.
To serve, lay one oatmeal cookie on each of 8 dessert plates.
Top with a spoonful of whipped cream mixture.
Top with another cookie and another layer of topping.
Its pretty if you make 3 layers.
Drizzle with additional honey.
Can garnish with edible flower petals or sugared flower petals..

That would look so pretty in the summer with the sugared flower petals...man, I haven't done that in several years, but it's such a nice "party" idea!
