Cheesy Potato Kielbasa Soup

- 3 Med Sized red potatoes,cut into chunks shopping list
- 21/2 cups broccoli, cut down to bite size shopping list
- 1 med sized onion, chopped shopping list
- 2-3 Cups Polska Kelbasa, sliced and halved w/ skin peeled off shopping list
- 4 tbsp butter shopping list
- 1/2 Cup milk shopping list
- 3tbsp flour shopping list
- 1/4 cup warm water shopping list
- 3 cups shredded sharp cheddar cheese shopping list
How to make it
- Put potatoes in a med sized pot and allow to boil until about half cooked. Add broccoli and cook together until tender, drain. In a frying pan, melt 1 tbsp butter to a nice golden color. Add onions and allow to soften. To onions, add the kelbasa and allow to cook for five minutes; stirring occasionally. In a coffee cup, add 3tbsp flour and warm water. Mix w/ fork or whisk until combined and no longer lumpy. Set aside. Take pot of potatoes and broccoli and mash down a little bit. Add 1/2 cup of milk and 3 tbsp of butter and bring to a slight boil. Add the flour and milk mixture to the pot. Allow to thicken. Once thick, add kelbasa and onions without draining. Mix in and then add your cheese. Stir until cheese has melted into the soup. Salt and pepper to taste. Serve in cute little dishes :)
