Ingredients
  • 4 cod fish fillets
  • 1-2 tablespoons lemon juice (to taste)
  • 2 tablespoons butter
  • salt (to taste)
  • paprika (to taste)

Directions
  1. Arrange fillets in a glass baking dish sprayed with cooking spray.
  2. Dot with butter.
  3. Sprinkle with lemon juice, salt and paprika.
  4. Cover dish with plastic wrap.
  5. Microwave 6 to 7 minutes or until fish flakes easily.

Wow, that is sooooo easy, and so nice not to have to turn on the oven...I think I have some cod in the freezer - will have to try this one soon, as we love fish and lemon. Thanks, MrsPH!! (and this will definitely bring a smile of memory to my mother!)
