How to make it

  • 1) After washing squash cut off ends and thinly slice.
  • 2) Place all ingredients in frying pan (Southerners live by cast iron).
  • 3) Bring to a boil. Reduce heat, cover, and simmer for approx. 30 minutes or until squash is tender and easily falls apart.
  • 4) Remove lid, increase heat, and cook until juices evaporate and squash beings to "fry". Add a little more vegetable oil if it sticks to pan.
  • 5) Carefully (it's hot) test for salt and pepper. Add additional if needed for taste.
  • Serving suggestion: This is wonderful with a ham or pork roast roasted in oven and additional fresh vegetables. Don't forget the cornbread with this meal!
