Double-baked Banana Bread

- 6 over-ripe bananas, cut into chunks shopping list
- 1 tbsp melted butter shopping list
- 1 tsp vanilla shopping list
- 8 oz cream cheese, softened shopping list
- 1/4 cup softened butter shopping list
- 3/4 cup sugar shopping list
- 1 egg shopping list
- 1 1/4 cups flour shopping list
- 1 cup oat flour shopping list
- 1/4 cup ground flax shopping list
- 1/2 tsp salt shopping list
- 1/2 tbsp cinnamon shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 cup strawberry-banana granola shopping list
- 1/4 cup diced dates shopping list
- 1/4 cup raisins shopping list
How to make it
- Preheat oven to 400F, lightly grease a small baking dish.
- Place bananas into the dish and drizzle with melted butter.
- Bake for 20 to 25 minutes, then coarsely mash (leave some chunks) See Photo. Stir in vanilla and set aside to cool slightly.
- Reduce oven to 350F and grease 2 loaf pans.
- In a bowl, beat together cream cheese, butter and sugar until well blended.
- Add egg, beating well.
- Mix together flours, flax, salt, cinnamon, baking powder and baking soda in another bowl, stir half into the creamed mixture.
- Add bananas and mix well, then add remaining dry ingredients and stir to combine.
- Fold in granola, dates and raisins.
- Bake for 45-50 minutes. Cool 15 minutes in the pans, then turn out and cool completely on a wire rack. See Photo
