How to make it

  • Preheat oven to 400F, lightly grease a small baking dish.
  • Place bananas into the dish and drizzle with melted butter.
  • Bake for 20 to 25 minutes, then coarsely mash (leave some chunks) See Photo. Stir in vanilla and set aside to cool slightly.
  • Reduce oven to 350F and grease 2 loaf pans.
  • In a bowl, beat together cream cheese, butter and sugar until well blended.
  • Add egg, beating well.
  • Mix together flours, flax, salt, cinnamon, baking powder and baking soda in another bowl, stir half into the creamed mixture.
  • Add bananas and mix well, then add remaining dry ingredients and stir to combine.
  • Fold in granola, dates and raisins.
  • Bake for 45-50 minutes. Cool 15 minutes in the pans, then turn out and cool completely on a wire rack. See Photo
