Hummingbird Muffins

- 2 cups all-purpose flour shopping list
- 1 cup whole wheat flour shopping list
- 1 1/2 cup sugar shopping list
- 1/2 tsp salt shopping list
- 1 tsp baking soda shopping list
- 1 tsp ground cinnamo1 1/2 tsp vanilla extract shopping list
- 3 large eggs, room temperature shopping list
- 1 1/2 cups vegetable oil shopping list
- 2 to 3 cups mashed ripe bananas shopping list
- 1 8-ounce can crushed pineapple with juice shopping list
- 1 cup flaked coconut shopping list
- 1 cup chopped walnuts shopping list
- Non-stick baking spray shopping list
How to make it
- Preheat oven to 350
- Stir all of the dry ingredients together in a large bowl with a whisk.
- Add the moist ingredients to the dry mix and stir until just incorporated.
- Spoon the mixture into prepared muffin tins
- Bake in the middle of the oven for about 25 to 30 minutes, until tester comes out dry.
- Cool on racks for ten minutes before flipping out of the muffin tins.
