This is moderate to make. The sauce will take some time to reduce so this is not a quick throw together recipe, but the sauce is awesome. You can use any type of chicken. Ingredients
- 3 pkg. chicken legs shopping list
- pepper shopping list
- 1 lg. can peaches in heavy syrup shopping list
- 1 lg. can crushed pineapple in syrup shopping list
- 1 16 oz. jar maraschino cherries shopping list
- 1 c. sugar shopping list
- 1/2 c. honey shopping list
- coconut shopping list
How to make it
- place chicken on cookie sheet lined with foil and sprayed
- season with pepper to taste
- broil until lightly browned
- Sauce:
- Pour peaches, pineapple, maraschino cherries into food processor and puree
- pour into lg sauce pan
- add sugar, honey
- Bring to boil then
- simmer for at least 60 min
- (watch closely that sauce does not boil over)
- Skim off film from top periodically while reducing
- Layer chicken in crockpot, alternating coconut
- Carefully pour sauce over chicken.
- Cook on high for about 2-4 hours
- Depending on your crockpot, It may cook faster
